Packed full of flavour and nutrient rich, this light, summer meal males a perfect lunch or dinner.
You can make the marinade and leave the prawns to soak it all up for an hour or so beforehand to intensify the flavour.
- 1 chilli, finely chopped
- 1 clove of garlic, finely chopped
- 1 lime, zest and juice
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 200g large cooked prawns
- 140g spinach leaves
- 2 avocados
- Mix the chilli, garlic, lime zest and juice, soy sauce and sesame oil together in a large bowl. Tip in the prawns and toss everything together so that it is well coated.
- Remove the prawns from the marinade and set to one side. Add the spinach to the marinade and mix so that it also becomes coated, then add the prawns back into the bowl and give everything a final toss.
- Tip out onto a serving dish. Slice the avocados and pop in amongst the spinach and prawns.
