This delicious, warming soup is guaranteed to bring comfort on a cold night. It’s super easy to make, and can easily be prepared using a soup maker.
- 2 tsp cumin seeds
- 1/2 tsp dried chilli flakes
- 2 tbsp olive oil
- 600g carrots, grated
- 140g split red lentils
- 1L vegetable stock, hot
- 125ml milk
- Begin by grabbing a large saucepan and, without adding any oil, fry the cumin seeds and chilli flakes together 1 minute until they are jumping around the pan.
- Remove half from the pan using a spoon, and set to one side. Now, add in the olive oil, grated carrots, lentils, vegetable stock and milk. Bring everything to a boil, then allow to simmer for 15 minutes until the lentils have softened.
- Whizz everything together using a stick blender until smooth, then season taste. Serve alongside some crusty, buttered bread.
